Although the calendar says Spring has arrived, the Cleveland weather continues to be quite fickle.  Our last snow was less than a week ago.  I know this as I was up at 3 a.m. feeding the baby and saw the flakes floating down from the clouds.  Oh the things you’ll see in the early hours of the morning!  So until the weather actually agrees with what the calendar says, I’m left to my own devices in trying to seduce Spring to stick around.  That includes this No Bake Dark Chocolate Truffle Key Lime Cheesecake.

    I made this recipe in my kitchen aid yesterday (and have made a similar lemonade one before.) I was hoping this recipe would turn out differently than the first lemonade one since they didn't really fully set-up. Like that one, I found that regardless of how long I whipped the ingredients all together- soft peaks never formed. They were beating around in my kitchen aid for some time and definitely thickened but not to soft peaks. The. After 5 hours in the fridge, it was more like a pudding pie vs key lime pie (that said, regardless of consistency it was incredibly delicious!!) I followed the recipe but should I have formed soft peaks with just the whipping cream and then adding in the other ingredients? Is it supposed to be frozen and that's just not mentioned?

      Hi, Meghan - It should definitely be the consistency of a no bake cheesecake, so a soft cheesecake. Thicker than pudding. So glad that you enjoyed it!

    Oh my these No Bake Dark Chocolate Truffle Key Lime Cheesecake makes me weak at the knees! They are creamy, luscious, and extravagant as I see in these photos. Will definitely add this to my favorite dessert recipes.

        You are always welcome, And you know what, I remember my mother using lemon in her favorite dish way back then. And I really missed it since I am not living with her nowadays. But, I should make it now, I want my kids to taste it and I am also curious how will keylime compliment the sweetness of this cake. I really need to try this, good dessert after a good meal of peking duck from www.mott32.com. What do you think? =)
