Way back when, before I had children, so like 10 or more years ago, I had a lot of spare time on my hands. My husband was in medical school, I was an interior designer and my evenings were spent in my craft room in the basement in our first home in Missouri. Andy would be studying and I was scrapbooking and immersed in an amazing online community of other women around the world who did the same thing. Although I’m completely fine with anchovies, my husband is in camp no anchovies on anything.
My Homemade Caesar Dressing with No Anchovies recipe is a direct copy of Leslie’s except that I’ve doubled the amount of garlic. Although my husband and I don’t agree on little fish, we both are garlic lovers. Thank goodness, I can’t imagine being married to someone who isn’t! Homemade Caesar Dressing (No Anchovies)
Ingredients
- 12 cloves garlic
- 2 egg yolks
- 1 teaspoon dry mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon Tabasco sauce
- 2 tablespoon lemon juice
- 1-1/3 cup olive oil
- 1-1/3 cup canola oil
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- In the bowl of a food processor, add garlic, egg yolks, mustard, Worcestershire sauce, Tabasco sauce and lemon juice.
- Process on low speed until combined.
- With processor on low speed, stream olive oil and canola oil until completely combined.
- Add salt and pepper and pulse on low two to three times.
- Can be stored covered in the fridge until ready to use, simply whisk together before using.
