Way back when, before I had children, so like 10 or more years ago, I had a lot of spare time on my hands. My husband was in medical school, I was an interior designer and my evenings were spent in my craft room in the basement in our first home in Missouri. Andy would be studying and I was scrapbooking and immersed in an amazing online community of other women around the world who did the same thing. One of those said talented women shared with me a recipe for Homemade Caesar Dressing with No Anchovies and it became an instant favorite at our house.
That is, until I lost said Homemade Caesar Dressing with No Anchovies recipe along the way. Luckily, I still had Leslie’s contact information stored away in my e-mail contacts and she didn’t even think twice about sharing it again with me. Although I don’t have much time for scrapbooking these days and I doubt she does either, I’m sure glad our paths crossed years ago. Her original recipe is an absolute gem and a compromise of sorts. Although I’m completely fine with anchovies, my husband is in camp no anchovies on anything.
My Homemade Caesar Dressing with No Anchovies recipe is a direct copy of Leslie’s except that I’ve doubled the amount of garlic. Although my husband and I don’t agree on little fish, we both are garlic lovers. Thank goodness, I can’t imagine being married to someone who isn’t! This eight ingredient salad dressing couldn’t be easier as everything is simply added to the bowl of a food processor and given a quick whirl. That’s it. The end. And you can even make it in advance. I love making a batch and then putting it in a mason jar in the fridge until needed. Dinner prep at it’s finest! This is what I do when I have my Chicken Caesar Pasta Salad on the menu. One less thing to think about come dinner time.
And before one of you comments and tells me anything about your opinions on using raw eggs in a salad dressing – I know someone will! – if this concerns you, simply look for an egg that’s been pasteurized. No drama needed with this dressing!
This Homemade Caesar Dressing with No Anchovies is the perfect way to enjoy the last of the season’s heirloom cherry tomatoes and romaine. The perfect lunch for me! You could also pair your salad with my insanely easy String Cheese Manicotti, rich and delicious Chicken Bacon Swiss Spaghetti Pizza or Quick and Easy Spinach and Ravioli Lasagna.
And forget buying the storebought stuff! It would also be the perfect ingredient subsittute in this delicious Melt in Your Mouth Caesar Chicken, main dish worthy Blackened Salmon Caesar Salad or these mashup Mini Chicken Caesar Salad Taco Boats.
