This week, the two middles have had camp every morning. Starting at the same time. In two different places. Although I pride myself in doing a lot, I’ve yet to figure out how to be in multiple places at the same time. Instead, I’m making sure everyone gets breakfast, one middle gets a packed lunch and then we’re out the door. Dropping off one at Lego camp a bit early to insure we get the other to sewing camp right on time. So far, so good. And really, how can it not be when we’re starting days with these Raspberry Chocolate Chunk Oatmeal Muffins.

Well, technically it’s my mother-in-law’s kitchen shortcut. Her Homemade Oatmeal Muffin Mix has become one of my pantry staples and is the head start to getting these delicious muffins on the table quickly.
Make store bought mixes a thing of the past! I love making a double batch of this oatmeal muffin mix to keep in my pantry so that when the menagerie requests muffins, I’m able to deliver. And quickly! It’s also the starting point to my Yogurt Blueberry Oatmeal Muffins and Pear Macadamia Oatmeal Muffins. These Raspberry Chocolate Chunk Oatmeal Muffins? They’re an upgraded version of everyone’s favorite Oatmeal Chocolate Chip Muffins.
Grab a mixing bowl and spoon as that’s all you’re going to need for these Raspberry Chocolate Chunk Oatmeal Muffins! Stir together the muffin mix, milk, egg and chocolate chunks and then carefully fold in the raspberries. I say carefully because nobody wants little pieces of berry in their muffins. We want whole berries, right? Glad we’re on the same page.

Raspberry Chocolate Chunk Oatmeal Muffins
Ingredients
- 3 cups Homemade Oatmeal Muffin Mix
- 1/2 cup milk
- 1 egg beaten
- 1 cup chocolate chunks
- 1 cup raspberries
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, stir together muffin mix, milk, egg and chocolate chunks.
- Gently fold in raspberries until just combined.
- Line muffin tin with paper liners and using a large cookie scoop, fill each muffin cup with batter.
- Bake for 20-22 minutes or until toothpick inserted in muffin center removes cleanly.
