Here’s what we’ll be eating this week:
Meatless Monday: Sweet + Smoky Quesadilla Casserole. An awesome meatless meal to start your week with. Use the recipe as written or feel free to include what you’ve got in the fridge as well. The last time I made it I included some leftover veggies from a previous meal for even more bulk.
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Slow Cooker Pork Roast and Cherries. One of Andy’s favorites and it uses my favorite ever slow cooker. Seriously love that thing!
Wednesday: Turkey Mac and Cheese Stir Fry. It’s stir fried rice in a more kid friend – read: less messy! – form.
Thursday: Slow Cooker Lemon Rosemary Lentil Soup. A second meatless option for the week. Lemon + rosemary = a perfect match.
Friday: Bacon Double Cheeseburger Pizza. A great way to kick-off the long weekend. Why decide on whether to have pizza or burgers for dinner when you can have both?!
