Here’s what we’ll be eating this week:
Meatless Monday: Spinach and Cheese Bagel Strata. It’s a clean out the fridge type of day! Our box of fruit and vegetables for the week from Door to Door Organics arrives on Tuesday and I love clearing out the rest of the prior week’s produce the night before. Strata and fruit for all!
I’ve selected Monday as a night of the week for our family to eat a meatless meal as it tends to be more budget friendly as well as a friendlier option for the environment. My meat and potato eating husband tends to go along with this idea because I also make him a yummy dessert in addition to his meatless meal. What can I say? I’m nice like that!
Tuesday: Porcupine Meatballs. Hello comfort food! I love these served with a baked potato as a side. Even better that I can prep them the night before after the menagerie is in bed and simply have to put them in the oven come dinner time.
Wednesday: Easy Chicken Pot Pie. As requested by the three year old who told me it’s been way too long since we’ve enjoyed this dish for dinner. I agree!
Thursday: Four Cheese Meatball and Sweet Pepper Lasagna. We’re huge meatball fans around here so this recipe is always well received!
Friday: Sweet and Smoky Bacon Brat Burger. Kicking off the weekend with dinner on the grill sounds like a great idea to me!
