If an easy dinner recipe is what you’re looking for, I dare you to find an easier recipe than these Slow Cooker Pepperoncini Beef Sandwiches. I’m not a big sandwich fan but this recipe is where I make an absolutely delicious exception.
And did I mention easy? So freakin’ easy! They’ve been on our menu for years but I’ve recently added my own twist which takes the flavor quotient up a notch but doesn’t increase the difficulty rating by one iota.
You might have seen other Pepperonicini Beef Sandwich recipes before, but this is where I take the reigns and add my own twist. A bit of crunch factor, if you will. I grab a handful of crispy fried onions – you know, of Twice the Onion Green Bean Casserole fame – and create a mountain of them on top of the cheese before adding the top of the sandwich roll.
The combination of crunchy onions, melty cheese and succulent beef is on point and makes my Slow Cooker Pepperoncini Beef Sandwiches stand out above the crowd!
Are Pepperoncini Peppers Hot?
Just in case y0u might be like one of my children and pose the same question, the answer is no. Pepperoncini peppers tend to lend more of a tang to recipes than heat. In fact, it’s much closer to a bell pepper than a jalapeño which is typically 40 times hotter.
And for the record, all four of my children absolutely love when these sandwiches are on our dinner menu!
What Can I Substitute for Pepperoncini?
In a bind and don’t happen to have a jar of pepperoncinis in the pantry? Pickled banana peppers can be substituted in recipes that call for pickled pepperoncini, including this Slow Cooker Pepperoncini Beef Sandwiches recipe.
TIP: I like to make this recipe in this slow cooker – it comes in 4, 6 or 8 quart options – or using the slow cooker function of my Instant Pot. If using your Instant Pot, you’ll want to use the tempered glass lid instead of the top that comes with it and is used for pressure cooking.
How to Make Slow Cooker Pepperoncini Beef
 In a 6 quart slow cooker, add beef chuck roast.
 Pour pepperoncini peppers, including liquid, over roast.
 Cook on LOW 8-10 hours.
 Remove roast from slow cooker and pull apart using two forks. Return to slow cooker.

Slow Cooker Pepperoncini Beef Sandwiches
- 3 pound boneless beef chuck roast
- 16 ounces sliced pepperoncini peppers undrained
- 8 sandwich rolls
- 16 slices mozzarella cheese
- 6 ounces crispy fried onions
- In a 6 quart slow cooker, add roast.
- Pour pepperoncini peppers, including liquid, over roast.
- Cook on LOW 8-10 hours.
- Remove roast from slow cooker and pull apart using two forks. Return to slow cooker.
- To assemble sandwiches, place a slice of mozarella cheese on top of one half of sandwich roll.
- Top cheese with a spoonful of beef mixture and an additional slice of cheese.
- Place under broiler until cheese is melted. Top with a handful of crispy fried onions and other roll half.
